I tasted some very tasty fish in Hoiping (a.k.a. Kaiping), in Gundong Province, China. Sometimes food should be simply cooked. This is definitely one of them.
Notice how after the small fish is fried, he eats it, head first, bones and all? That’s how to eat it! The bones will be soft enough. The scales are scraped off before cooking, if you were wondering about that.
Hao chi! That’s delicious in Mandarin (pronounced “How chur”).
