1. Soak the beef in oil for 1-2 hours
When heated, the oil will inflate to break down the fiber of the meat, helping to make it tender.
2. Coat the meat with a batter
This way, the water in the meat will be kept in.
For 250 g of beef, mix together:
- 10 g wine
- 5 g salt
- 1 g MSG (monosodium glutamate)
- 1 egg, and
- 20 g wheat starch
Stir them together until the ingredients are well mixed, and then coat the beef with this mixture.
3. Soak in beer for half an hour
The enzymes in beer break down the protein in the meat, making it tender.
When frying beef, make sure the oil is hot before adding the beef to the pan.
Do not fry the meat for too long, as it will make the beef tough.
