Here is an easy recipe to make a traditional Southern Chinese dish:

Ingredients:

  • 5 whole chicken wings cut into two pieces (wingtip and wingette, and drumette)
  • 1 tbsp soy sauce
  • 1/2 tbsp cooking oil
  • 2 green onions (scallions), cut into six pieces
  • 6 thin slices of ginger root
  • 2-3 slices of chili pepper (optional)
  • 1/2 tbsp oyster sauce
  • 1/4 tsp salt
  • 1 tsp sugar
  • 1/2 tbsp cooking wine
  • 1 cup water
  • 1/2 tbsp cornstarch, mixed with 1 tbsp warm water

Cooking method:

  1. Heat a wok on high for about 15 seconds, add the oil, and coat the pan
  2. Place chicken wings in the pan, lower the heat to medium, and cook each side for about 15 minutes or until they turn golden brown
  3. Add the cooking wine
  4. Add ginger, chili pepper, oyster sauce, salt, sugar, and stir fry on high heat for about 1 minute
  5. Add water and cover with lid, cook for about 5 minutes on low heat
  6. Turn heat to high, add cornstarch mixture, green onion, and stir-fry for 30 seconds
  7. Enjoy!
