Tired of the usual taste of eggplant? Here is a simple way for a new dish that is especially good for breakfast.

Ingredients:
1 long eggplant
3 eggs
2 green onions
small amount of salt and flour

Steps:
1 Wash the eggplant, dry, and cut into thin slices;
2 Cut green onions into bits;
3 Put eggplant slices into a bowl;
4 Add eggs, green onion shreds, salt, and flour, and mix well;
5 Add oil to a pan;
6 Pour mixture into the pan, and cook over low heat;
7 When golden, flip over.
8 Ready to serve when both sides turn golden.

Eggplant has a subtle sweet taste, and has a cool nature in food energy. It has the
effects of clearing away heat, stopping bleeding, reducing swelling, and easing pain.
