600 g (1.3 lb) noodles

300 g (.7 lb) beef brisket

2 Chinese baby cabbage

small amount of green onion

3 slices of ginger

2 tbsp hot bean paste

1 tsp Szechwan peppercorns

6 tbsp soy sauce

1 tbsp cooking wine

1 tsp sugar

¼ tsp salt


1. parboil beef, rinse clean, cut into 3 small square pieces

2. Heat the wok, add 3 tbsp oil, stir fry hot bean paste until fragrant, add peppercorns and fry slightly. Then add in10 cups water, green onion, ginger, and the beef. Bring to a boil, and simmer over low heat until the beef is tender (approx. 1 hour 40 minutes).

3. Boil Chinese cabbage until cooked.

4. Boil noodles until cooked, lift out and drain. Place in a soup bowl, pour beef soup in, place beef and Chinese cabbage on top, and serve.
