ORLANDO, Fla. — From artisan cheeses and handcrafted charcuterie to innovative bakery creations and ready-to-eat meals, the International Dairy Deli Bakery Association (IDDBA) Show once again brought together the world’s leading food manufacturers, retailers, and industry professionals to explore the future of fresh foods.

Held June 7–9 at the Orange County Convention Center in Orlando, Florida, IDDBA 2026 attracted more than 11,000 attendees and over 1,000 exhibitors from around the world, making it the largest show in the event’s history. Buyers from major supermarket chains, specialty retailers, distributors, and foodservice companies gathered to discover new products, meet suppliers, and identify emerging consumer trends.

Unlike consumer food festivals, IDDBA is a business-to-business marketplace where many of the products showcased eventually find their way onto grocery store shelves months later. For exhibitors, the event offers an opportunity not only to launch new products but also to strengthen relationships with retail partners and expand distribution networks.

Walking the exhibition floor revealed a strong emphasis on premium ingredients, authentic craftsmanship, and convenience. Exhibitors showcased everything from gourmet cheeses and European-style cured meats to artisanal breads, desserts, prepared meals, plant-based offerings, and international specialty foods. Many companies highlighted family traditions, regional recipes, and small-batch production while incorporating modern packaging and retail-ready merchandising.

Health-conscious consumers continue to influence product development across nearly every category. Companies introduced products with cleaner ingredient lists, higher protein content, lower sugar formulations, and functional benefits while maintaining premium taste and quality. At the same time, convenience remained a major theme, with retailers seeking products that satisfy consumers’ growing demand for restaurant-quality meals that can be enjoyed at home.

Another noticeable trend was the growing interest in international flavors. Manufacturers presented products inspired by cuisines from Europe, Asia, Latin America, and the Middle East, reflecting consumers’ increasing appetite for authentic global food experiences.

Beyond product innovation, IDDBA serves as an important networking platform where manufacturers, retailers, brokers, and distributors can develop long-term business relationships. Educational sessions throughout the event explored consumer behavior, merchandising strategies, labor challenges, artificial intelligence, and evolving retail technologies that are reshaping the grocery industry.

As consumer expectations continue to evolve, the products and partnerships formed at IDDBA often influence what shoppers will see in supermarkets in the months and years ahead. The 2026 show demonstrated that while technology and consumer preferences continue to change, quality ingredients, authentic craftsmanship, and meaningful relationships remain at the heart of the fresh food industry.
