As Mario Ursumando spoke about his childhood, I could almost step into his grandmother’s kitchen. The ragù had been left to simmer through the night over a gentle flame. By morning, its rich aroma filled every corner of the house, quietly announcing the Sunday lunch that would entice everyone to the table. I could practically hear the wooden spoon gliding around the pot, the clatter of pans, familiar voices drifting from room to room, and the joyful anticipation of another meal shared together.
In Italy, recipes are rarely measured. They are remembered — passed from one generation to the next through patient hands, generous hearts, and countless family meals. That same spirit fills Audace.
Opened in 2024, Audace blends the flavors of Italy with the energy of New York without losing sight of what matters most: genuine hospitality. Mario envisioned a restaurant that would be bold and contemporary, yet rooted in the traditions that shaped him.

“Our guests have their favorites,” he says with a smile. “Part of welcoming them is making sure they can always find something familiar.”

His own favorite remains the Rigatoni al Ragù Napoletano, a slow-cooked Neapolitan ragù enriched with Parmigiano Reggiano fondue and fragrant basil oil. It is more than a signature dish — it is his grandmother’s kitchen, lovingly recreated one plate at a time.
The menu continues that journey through Italy with handmade pastas, fresh seafood, and beautifully prepared regional specialties. The pillowy Gnocchi Ripieni al Pesto e Tartufo, the classic Linguine alle Vongole, and the delicately grilled Polpo Mediterraneo celebrate the simplicity and generosity that have defined Italian tables for generations.
Audace’s contemporary Neapolitan pizzas deserve their own quiet applause. Crafted by Pizzaiolo Fabio Stipulante, whose experience includes Michelin-starred kitchens in Puglia, they honor centuries of Neapolitan tradition while embracing a touch of modern creativity. It is no surprise they have earned national recognition, yet even here, the focus remains on what Italian food has always done best — bringing family and friends together around the table.

Every memorable Italian meal deserves a sweet ending. The warm Tortino Nocciola, with its molten white chocolate and hazelnut center, silky salted caramel, crunchy hazelnut crumble, and vanilla gelato, is an invitation to linger a little longer and enjoy one last conversation before saying goodbye.

As I stepped back onto Park Avenue, I realized that the finest restaurants are remembered not only for exceptional food, but for the memories they awaken.
