Just two years after opening Pasta Della Nonna, Gilberto is already preparing for the restaurant’s biggest milestone yet.

In the coming months, Pasta Della Nonna will move into a much larger location—one that is several times the size of the current restaurant.

For many business owners, expanding so quickly would seem like an easy decision.

For Gilberto, it wasn’t.

“When they first proposed it to me,” he admitted, “I thought, ‘Oh my God.'”

The current restaurant was already successful.

Guests were returning.

Business was steady.

The thought of starting over in a much larger space brought both excitement and uncertainty.

“It was a very stressful decision.”

“But we need the space.”

The biggest challenge wasn’t the dining room.

It was the kitchen.

“Our kitchen is very small.”

“We struggle every day.”

Preparing fresh sauces, handmade pasta, premium steaks, seafood, and multiple dishes at the same time requires room to work.

“We don’t have enough space to prep.”

“We don’t have enough burners.”

“When several tables order at once, it becomes difficult.”

For Gilberto, moving isn’t about becoming bigger for the sake of being bigger.

It’s about creating a better experience.

The new restaurant will offer a much larger dining room, private event spaces, a spacious bar, outdoor seating, and a significantly larger kitchen.

It will also allow Pasta Della Nonna to host weddings, family celebrations, corporate dinners, and private events—something the current location simply cannot accommodate.

“The potential is huge,” he said.

Built on relationships

One thing became clear throughout our conversation.

Gilberto rarely talks about competition.

Instead, he talks about relationships.

His relationship with his employees.

His relationship with his chef.

His relationship with his guests.

Even his opportunity to move into the larger building came from a relationship built on years of mutual trust.

Rather than viewing business as a series of transactions, he views it as something that grows over time through honesty, consistency, and respect.

That philosophy extends to everyone around him.

He speaks about his staff with appreciation.

He trusts his chef to create daily specials and experiment with new dishes.

“If he makes something new, he’ll ask me to try it.”

“If I think something can be better, we’ll talk about it.”

“It’s teamwork.”

There is no ego.

Only a shared goal of giving every guest the best possible dining experience.

The American Dream, his way

Gilberto often speaks with remarkable humility.

He never describes himself as a successful entrepreneur.

He never talks about becoming wealthy.

In fact, when asked about his long-term dream, his answer was surprisingly simple.

“I’m not expecting a luxury life.”

“I just want a good life.”

“A little house.”

“A nice afternoon.”

“A glass of wine.”

“My dogs.”

“Maybe a pool.”

“And that’s enough.”

Perhaps that is exactly why so many people connect with him.

His dream has never been about chasing luxury.

It has been about doing ordinary things extraordinarily well.

Serving every guest with respect.

Creating memorable meals.

Building a restaurant people trust.

One table at a time.

More than a restaurant

As our conversation came to an end, I realized Pasta Della Nonna is more than an Italian restaurant.

It is the reflection of one man’s journey.

A young immigrant who arrived in America in 2002 with little English.

A waiter who learned every detail of hospitality from the ground up.

A manager who spent twelve years mastering fine dining.

And today, an owner whose restaurant has become one of Orange County’s favorite dining destinations.

Throughout the interview, Gilberto returned to the same idea again and again.

Just three simple words.

“Food. Service. Consistency.”

Perhaps those words explain not only why Pasta Della Nonna has become such a success, but also why guests keep coming back.

Because when people walk through the doors, they don’t simply enjoy a meal.

As Gilberto puts it,

“People come here because they want to feel special.”

And at Pasta Della Nonna, that is exactly how they are treated.
